Oh cupcakes...how I love thee

About five years ago my boyfriend and I had gotten into the habit of eating out practically every meal.  We also rounded out our healthy lifestyle with the basic staples. You know- cupcakes, cookies, ice cream, brownies, frosting on anything we could think of.  This was our food pyramid:


Then one day Jay had an epiphany.  He said to me, "I wonder if my legs always feel so tired because of all this junk we eat."  I said, "Nah, we just need to work out more."  =) So we did. And guess what? You start to feel guilty about working your butt off and then stuffing your face with junk. It actually didn't taste as good or give me that sweet sense of ahhh.  We cut out the pop (soda for all those not from the midwest) and greasy fast food too.


There's one place in my diet I struggle. I LOVE my sugar. Jay has since given it up practically all together. I just don't have that kind of willpower. I get pretty ugly when I don't have some sugar in me by the end of the day. We eat really healthy meals so I justify my daily treat. There are times I wish he would relax about it just a touch. The other day was his birthday and we didn't have a single cake, cupcake, etc. to celebrate. He just doesn't want it. He SWEARS he feels an inch of fat on his rock-hard abs the day after he eats sweets.  Me? I really don't care about that extra inch of fat. It just blends in with the rest! I really miss my cakes and cupcakes though because if we make them then I'm forced to eat the entire batch by myself.  I mean it's not a problem. I'm up for the task but I'm pretty sure I'd end up in front of the mirror at some point crying about how I don't understand why I work out and still can't lose the weight. I stumbled across something the other day though that made my mouth water and I could feel my pulse rate increase. Feast your eyes on this:

The coffee bean cupcake.  This glorious concoction can be found in the book, Vegan Cupcakes Take Over the World.  So, vegan, that has to be healthy and good for ya right?  Right?  I mentioned it to Jay and he said it sounded interesting. Hopefully, I can talk him into it.
